Easy Chicken Soup

Hooray!  What’s better than an easy chicken soup? Made some this week and my family loved it. As a matter of fact, the pot was completely empty by the end of the night. Makes me happy that they appreciated it so much. This is a simple dish to make after coming home from a long day at work. Just throw it together and let it simmer while you unwind.

Here’s the recipe for The Happy Balance Girl’s Easy Chicken Soup:

Prep time: 10 min.

Cook time: 1 hour

Serves 6

Ingredients:

1 pre-cooked rotisserie chicken

1 round onion (I prefer a sweet variety)

2 cups kale, greens or bok choy

6 cloves garlic

Water to fill the pot

Sea Salt to taste

 

Step 1: Put chicken in pot and fill with water. Water should cover the chicken entirely

Step 2: Turn stove on high and bring water to a boil.

Step 3: Slice round onions and put in pot

Step 4: Add garlic cloves and salt

Shhhhhhh! It’s the secret ingredient. I like to throw a whole lot of ’em in the pot.

Step 5: Reduce heat and simmer for 1 hour

Step 6: Turn stove off

Step 7: Pour soup in colander over another pot to catch the broth; pick out the bones from the chicken

Step 8: Add the rest of the ingredients into the broth (greens, chicken, onion, garlic)

A soothing spoonful of true comfort food.

Serve with your favorite crusty bread.
