Kabocha Pumpkin Soup

Kabocha Pumpkin Soup is perfect for every season. The semi-sweet and nutty flavor kindles warm and fuzzy feelings of coziness throughout the year. I’ve made this soup twice in the past two months and the pot of yumminess was demolished both times. The popularity of this soup in our home has overtaken the love of traditional beef stew.

Here is the awesome recipe:

Kabocha Pumpkin Soup

Prep time: 20 minutes

Cook time: 1 hour

Ingredients:

  • 1 Kabocha Pumpkin
  • 2-3 Okinawan Sweet Potatoes diced into 1 inch chunks
  • 1 Sweet Round Onion
  • 1 can of broth (I used beef)
  • 1/2 to 1 pound of beef or chicken
  • 1 Tb minced garlic (I use the one from the bottle)
  • Sea salt to taste

Cut Kabocha Pumpkin into large chunks

Prepping the Kabocha Pumpkin:

(Note: With its hard outer layer, cutting it into small pieces is very difficult. I like to do the following to make it easier to cut and much easier to break down in the soup.)

  1. Slice into large pieces
  2. Place slices on plate and microwave on high for 5 minutes
  3. Let cool and cut into 1 inch chunks (Keep skin on.)

Instructions for making soup:

  1. Cut meat or chicken into 1 inch chunks and brown in a pan (I used extra virgin olive oil)
  2. Add sweet round onions and garlic into pan and let onions carmelize
  3. Transfer contents of pan into a pot
  4. Add 2 quarts of water and 1 can of broth
  5. Bring water to a boil
  6. Add Kabocha pumpkin and Okinawan sweet potato chunks into pot
  7. Reduce heat and let simmer for 1 hour

Notes:

1. Soup should thicken while pumpkin and sweet potatoes are reduced, leaving slightly chunky but buttery soft pieces

2. Eat with favorite bread.

Honestly? The whole family loved it. There were some leftovers, but everyone came home the next day, looking forward to more of the soup. The pot was completely clean by the next meal.
